- **Vinification:** Soft, gentle pressing; the clean must settles statically in temperature-controlled tanks, then ferments at low temperature in stainless steel. In May a second fermentation takes place in the bottle, followed by maturation on the yeasts in a cool, protected environment, following the rules of Metodo Classico.

## Tasting notes

Straw-yellow colour with a very fine, persistent perlage. Deep aromas of fruit such as peaches and pears, and fresh bread. Pleasant on the palate with good acidity. Persistent finish with a sensation of freshness.

Excellent as an aperitif, and a great wine to accompany every course.
