- **Exposure:** South to south-west facing, at about 150 to 160 metres above sea level.
- **Harvest:** Hand-picked into 15kg crates, about three weeks after physiological ripeness, a deliberately late harvest.
- **Vinification:** Gentle pressing, followed by static cold settling; the clear must then goes into new French oak barriques, where alcoholic fermentation takes place. The wine matures in barrique for 8 months, then a further 6 months in 0.5-litre bottles.

## Summary

A late-harvest Sauvignon vinified as a still white table wine, fermented and aged partly in new French oak and bottled in 0.5 litre format.

## Tasting notes

Golden yellow with greenish reflections. Wide-ranging and elegant on the nose, with notes of toasted mandarin peel, candy floss, candied citron and pastry cream. Fully structured and harmonious on the palate, with acidity supporting the notable residual sugar, long and persistent.

## Food pairings

Elaborate pâté-based starters, medium and long-aged cheeses, even lightly blue-veined (wonderful with an aged Montebore), marzipan desserts.
