The wine is kept in steel vats for a year to preserve freshness, then bottled in May of the year after harvest, where it can mature for several years.

## Summary

Il Forno, Cascina Gilli's first-ever label (1985), is a still Freisa d'Asti DOC from the Vigna del Forno, the oldest vineyard on the Bricco Gilli estate, aged in steel.

## Tasting notes

Intense ruby red. Delicate hints of wild berries, an intensified raspberry with lighter traces of blackberry and rose. Fresh and velvety, softer and more structured than a typical Freisa, with reduced tannin.

Meat, mildly aged cheese, and more demanding dishes such as braised beef, curried chicken or barbecue.
