- **Vinification:** Grapes are crushed, pressed and naturally clarified. The juice is stored without sulfites at low temperature to prevent fermentation starting; yeast is added and the temperature raised to 18°C for alcoholic fermentation in a stainless steel autoclave that preserves the natural CO2. Fermentation is stopped at 5.5% alcohol by cooling again; there is no malolactic fermentation, to keep acidity and varietal freshness.

## Tasting notes

Pale sunshine yellow, with intense aromas of peach, sage and ginger. Delicately sweet and lightly sparkling on the palate, with balanced acidity, good complexity and a refreshing finish.
