- **Vinification:** Grapes are destemmed immediately and the free-run juice is left in contact with the skins for one night (cryo-maceration) before pressing. Alcoholic fermentation takes place in French oak barriques over almost a month; malolactic fermentation happens if the vintage calls for it. The wine is kept on its fermentation lees until bottling, with a weekly batonnage.

## Tasting notes

A highly complex nose of white flowers and hazelnut with well-integrated wood notes. Sweet and mineral on the palate at once, savoury and harmonious with a persistent aftertaste. The estate says this wine can age for several years.
