- **Vinification:** The wine comes from four small parcels within the single Tre Stelle cru. Grapes are hand-picked and gently pressed by machine so the stalks stay whole and the seeds are not crushed. Alcoholic and malolactic fermentation take place in steel tanks, with skin maceration of about 30 to 35 days with a semi-submerged cap. The wine is then aged for about 20 to 22 months in large, untoasted oak barrels before bottling on a waning moon, unfiltered and unclarified.

## Tasting notes

Garnet red in colour, with elegant notes of rose and violet, red berries, a vein of fresh minerality, and snappy, silky tannins. Long, persistent finish.

Goes well with game and blue cheeses, but is also a perfect companion at any table when young.
