- **Vinification:** Grapes are hand-picked and gently pressed by machine so the stalks stay whole and the seeds are not crushed. Alcoholic and malolactic fermentation take place in steel tanks; the pomace stays in contact with the must for 8 days, kept submerged by pumping over. The wine ages only in steel, no wood, before bottling on a waning moon, unfiltered and unclarified.

## Summary

A limited-production white from a single vineyard in Neive known locally as Mun Crü ('raw bricks' in Piedmontese dialect), macerated on the skins for 8 days and aged only in steel.

## Tasting notes

Bright, intense yellow with golden reflections. Elegant floral notes of jasmine, hints of sweet citrus peel, white peach and acacia honey. Intriguing, flavourful structure, round and balanced, savoury with a long finish.

## Food pairings

Goes very well with appetizers, first courses, white or red meats, and fresh to medium-aged cheeses.
