- **Vineyard planting:** Uvalino, an old, nearly forgotten local variety, reintroduced in the estate's own experimental vineyard.
- **Vinification:** The must, from crushing and partial destemming, ferments slowly, over 20 days, at a moderate 22 to 25°C with frequent pump-overs for full anthocyanin and phenolic extraction; malolactic fermentation and ageing follow in prized 5-hectolitre oak tonneaux.
- **Serving temperature:** 18°C in large tulip glasses with a slightly flared rim.

Made from Uvalino, an almost-extinct local red variety the estate revived through its own vineyard research.

## Tasting notes

Intense crimson red with fine garnet tones that vary with the vintage. Broad, intense bouquet of ripe fruit and sweet spices, very persistent. Dry, warm, well-balanced palate, pleasantly acidic with marked tannins that soften with age, and a long, intense aromatic finish. Alcohol 14.5 to 15.5% vol. The estate notes the variety is naturally rich in resveratrol.
