- **Vinification:** Skin-contact fermentation lasts about 12 days at a constant 28°C for maximum colour and tannin extraction, followed immediately by malolactic fermentation.
- **Serving temperature:** 18°C in fairly wide glasses.
- **Storage:** Aged about 8 months in medium oak casks, then over a year in bottle; released in the second year after harvest and keeps developing for 4 to 5 years at a constant 15°C.

## Tasting notes

Intense ruby red turning garnet with age. Broad, intense, very persistent bouquet with vanilla and forest-fruit notes. Dry, warm, full-bodied, highlighting the variety's vinosity, with notable softness, balance and a long, intense finish. Alcohol 14.5 to 15% vol.

Pasta dishes such as tagliatelle and ravioli with meat or game ragù, meat mains, stews and roasts, medium-aged cheeses, tome and pecorino.
