In spring the wine goes into large oak casks, where it ages about three years in 3,000 to 4,000-litre botti; depending on the vintage it rests a further 12 months before bottling, then about six months in bottle before release.

## Tasting notes

Garnet red with ruby glints that turn orange with age. Violet, rose and fresh fruit in youth, moving to vanilla, cinnamon and green pepper. Dry, full, warm and austere but velvety, with a slight liquorice and leather finish.
