- **Vinification:** Grapes are picked into small crates stacked on pallets in well-ventilated areas, where they dry in the autumn breezes. Destemmed by hand and softly crushed. Fermentation on the skins for 18 to 20 days at 22-24°C with daily pump-overs. Malolactic fermentation takes place during ageing, at least 36 months in barriques and tonneaux. At least six months in bottle before release.

## Summary

A rare Riserva of dried Ruchè grapes, 14.5% abv, aged at least three years in oak and released more than four years after the harvest.

## Tasting notes

Ruby red with garnet shades. Delicate bouquet with oriental spices such as cumin, cardamom and pepper. Warm on the palate, exceptionally balanced and soft, with long aromatic persistence.
