- **Vinification:** Hand-harvested in crates. Cryomaceration of whole bunches for 3 days at 0 C. Crushed and left in the press for 15 hours, then softly pressed and the must settled. Fermentation with selected yeasts in steel at 15 C. 3-4 months in steel on the lees, bottled in early spring, then at least 2 months in bottle.

## Summary

Piemonte Rosato from a red-berried variety, cryomacerated and aged briefly on the lees.

## Tasting notes

Bright, polished quartz pink. A floral bouquet of geranium, violet, wisteria and acacia with white pepper, ginger and horseradish. Balanced freshness, savouriness and softness, with a finish playing between pink grapefruit and candied orange.

## Food pairings

Prosciutto crudo with melon, fried baby octopus, battered courgette flowers or fried mushrooms. Also aubergine parmigiana, vitello tonnato or roast beef.
