## Tasting notes

Bright straw yellow with light moss-green streaks. Sage, wild herbs and yellow flowers, with mineral notes and hints of hydrocarbons emerging with age. Fresh and savoury on the palate, with a finish of subtle almond.

## Food pairings

Fish stews, marinated sardines and mixed fried fish, or hot vegetable starters, vegetarian flans and fish souffle. Also raw Piedmontese fassona beef, risottos, meatballs and white-meat sausages.
