Fermentation with selected yeasts in steel at 15 C, 9-10 months on the lees with batonnage. Second fermentation in bottle, then about 80 months on the lees. Disgorged at the end of ageing and topped up with the same wine. Made only in the years judged best.

## Tasting notes

Brilliant gold and deep straw yellow. Cooked fruit, quince jam, apricot, honey and hawthorn on the nose with a hint of fine wood. Enters the mouth with mineral and savoury notes and a silky perlage.

Raw shellfish platter, crisp fried fish, rich fish first courses or dishes with bottarga. Also white meats, smoked caciotta and semi-aged cheeses.
