Fermentation begins in steel at a controlled 18 C and finishes in 300 l French oak barrels. 12 months in wood with batonnage, bottled the following year, then at least 12 months in bottle.

Deep straw yellow with honey reflections. Ripe fruit and a light spice on the nose. Direct, savoury and warm on the palate, with toasty and nutty notes.

Piedmontese fritto misto, fried and poached eggs and gratinated asparagus. Well-stirred risottos, goose pate and goat cheeses. With age, toma del fieno or a pit-aged cheese.
