## Tasting notes

Not too deep a ruby. Entirely floral opening of violets, red roses and a distinctive note of flowering geranium, followed by blackberry and morello cherry fruit or spice such as pepper and cardamom. Dry yet soft on the palate, decidedly smooth, with a soft, velvety structure and polished tannins softened by alcoholic warmth; the nose returns in the finish.

## Food pairings

Good affinity with aged and blue cheeses and filled egg pasta. Red meats, both slow-cooked like stew and roasted; also structured white meats such as curry or mustard preparations. Unusual pairing: truffled anchovies or lamb with mushrooms.
