- **Vinification:** Destemmed and crushed, fermented in steel tanks with repeated pump-overs for colour, tannin and aroma extraction, then cold-stabilised naturally over winter. Aged over a year in barriques (225-litre oak casks), bottled the following summer and rested a further 6 months at the estate.

## Summary

Sant'Evasio's first barrique-aged Barbera, launched with the 1988 vintage as the estate's pioneering premium selection, named after a blackbird heard singing while tasting its first vintage.

## Tasting notes

Ruby red with garnet tinges and pleasant violet reflections. Intense, complex bouquet, elegantly oaked and very persistent, with delicate spiced notes and ripe red fruit. Full-bodied, soft, very persistent palate, balanced between the variety's typical acidity and barrique tannins.

Red meat second courses, elegantly, plus stews, game and well-aged cheeses and polenta.
