- **Vinification:** Grapes pressed to must, immediately chilled to zero degrees to prevent fermentation, then clarified of solids and kept at a constant near-zero temperature in autoclave. The must is then warmed to 18°C and selected yeasts added; fermentation is stopped by refrigeration once the wine reaches 4.5-5.5% abv, then filtered and bottled.

## Summary

A traditional Moscato d'Asti from the estate's San Nicolao vineyard on calcareous marl.

## Tasting notes

Straw yellow with light golden highlights. Intense bouquet, typical of the grape, with notes of peach, sage and lemon and an acacia-flower finish. Sweet, intense, delicate palate with good natural effervescence.

## Food pairings

Baked desserts and low-density leavened desserts, especially fruit-based ones; also suggested with zabaglione, panna cotta, cream-rich Piemontese desserts, Milanese panettone, Veronese pandoro and Mombaruzzo's amaretti.
