- **Vinification:** Grapes pressed and destemmed, macerated on the skins for about 3 days at 15°C, then the must immediately chilled to zero degrees to prevent fermentation. Warmed to 18°C with selected yeasts added; after about twenty days, once the wine reaches 4.5-5.5% abv, fermentation is stopped by refrigeration, then filtered and bottled.
