The following spring the wine is re-fermented in bottle at 15°C for about 50 days; bottles rest on the lees for a minimum 30 months before riddling (remuage) and, after about 30 days, disgorgement and dosage.

An Alta Langa DOCG Rosé made entirely from Pinot Nero, aged a minimum 30 months on the lees using the Metodo Classico.

## Tasting notes

Powder-pink colour with a lively bead. Delicate but persistent nose with a light aroma of small red fruits; crisp mousse and a full, savoury palate.
