- **Vinification:** Hand-picked grapes from prime micro-areas of the Asili cru are crushed with 10% non-destemmed grapes, and the must ferments in wooden vats with two fillings per day for proper colour and aroma extraction. Submerged-cap maceration continues for about 45 days. After racking, the wine ages 30 months in second and third passage barriques, then a further 12 months in the bottle before release.

## Tasting notes

Brilliant garnet red with shades of orange. Intense nose of lavender, pine, rose petals, aromatic herbs, spices and goudron. Dry, full-bodied and warm, exceptionally smooth and velvety.

## Food pairings

Braised and stewed red meat, game, and aged cheeses; becomes a meditation wine with age, and pairs surprisingly well with chocolate.
