Fermentation continues at controlled temperatures between 16/18C until 5% ABV. Once bottled, it matures until September of the year after harvest.

## Tasting notes

Intensely straw-yellow with golden reflections, broad, complex and finessed on the nose with fruity notes of yellow peach and apricot, acacia and sage, sweetness balanced by acidity, with creamy, persistent bubbles and a long, intense finish.
