- **Vinification:** Hand-selected bunches picked in late August or early September. Pressed without destemming in soft pneumatic presses. The must is chilled to stop fermentation and settle the lees, then held in sealed stainless steel tanks. Fermented in sealed autoclaves, which produce the carbon dioxide behind the sparkle, with about three months on selected yeasts. Bottled on isobaric fillers in bottles built for 4-5 bar, the cork held by a wire cage.

## Tasting notes

Colour: very pale straw to gold. Nose: delicate, characteristic Moscato aroma. Palate: soft, savoury, fresh and aromatic; fine, persistent foam.
