- **Vinification:** Picked in late August or early September and pressed without destemming in soft pneumatic presses. The must is chilled to stop fermentation early and settle the lees, then taken to 0 °C and stored in cold-room stainless steel tanks. Second fermentation in sealed autoclaves with selected yeasts forms the foam. Bottled on isobaric fillers at 4-5 bar, cork held by a wire cage.
