- **Vinification:** Hand-selected bunches picked in late August or early September. Crushed without destemming and soft-pressed in pneumatic presses. The must is chilled to 6-8 °C to hold off fermentation and settle the lees, then to 0 °C to stop it so the wine stays sweet, and kept in sealed stainless steel tanks in a cold room. Fermentation happens later in sealed autoclaves, where the carbon dioxide forms the foam. Bottled on isobaric fillers in bottles built for 4-5 bar, the cork held by a wire cage.
