- **Vinification:** Hand-selected bunches picked in late August or early September. Crushed without destemming, then soft-pressed in pneumatic presses. The must is chilled to 6-8 °C, then to 0 °C to stop fermentation, and kept in stainless steel. Fermented in autoclaves with about 3 months on selected yeasts. Bottled on isobaric fillers at 4-5 bar, cork held by a wire cage.

## Tasting notes

Colour: very pale straw to gold. Nose: delicate, characteristic Moscato aroma. Palate: soft, savoury, fresh and aromatic.
