- **Vinification:** Ripe grapes are pressed without stalks and the skin anthocyanins gently tint the must pink. First fermentation in steel vats, then the wine rests on fine lees until bottling in spring. Second fermentation in stacked bottles for about 36 months. Hand riddling on wooden pupitres, frozen disgorgement. Dosage never above 8 g/l.

Rosé Brut Millésimé Alta Langa DOCG from Pinot Noir only, about 36 months on the lees. Cocchi says it was the first to make a rosé Alta Langa.

## Tasting notes

Fresh and tasty, a Brut with low dosage, rigorous and decidedly dry. Its spicy style grows with age. Volume and good balance give an intensely fruity flavour and a strong temperament.
