- **Vinification:** Before harvest the grapes of each variety are sprayed with water to wash off summer sulphur treatment residues. Crushed and destemmed separately by variety with no potassium bisulphite added to the grapes, then spontaneous alcoholic fermentation with indigenous yeasts in contact with the skins in temperature-controlled steel tanks. Dry racking and transfer to 500-litre oak barrels. Malolactic fermentation carried out entirely in barrel immediately after alcoholic fermentation. Aged on the lees in barrel for a few months with weekly stirring, then blended in steel with no fining, stabilisation or filtration, and bottled, resting in bottle at a constant 14°C for a few months before release.
