- **Vinification:** Crushed and destemmed, then spontaneous alcoholic fermentation with indigenous yeasts in contact with the skins in temperature-controlled steel tanks. Dry racking and transfer to 500-litre oak barrels; each variety is vinified separately. Malolactic fermentation carried out entirely in barrel immediately after alcoholic fermentation. Aged in barrel for a long period, separately for each variety, then blended in steel and bottled, resting in bottle at a constant 14°C for a few months before release.
