# Cinerino (Abbona)

- **Vinification:** Crushed and destemmed with skin maceration using CO2. Racked and gently pressed, then static settling and transfer to acacia barrels with inoculated selected yeasts. Alcoholic fermentation follows in barrel at cellar temperature, with daily batonnage until fermentation ends. Aged on the lees for a few months with weekly batonnage, then aged in acacia barrels for a few months more before assemblage in steel, static settling, racking and bottling; rests in bottle at a constant 14°C before release.

## Summary

Cinerino grew out of the Abbona family's encounter with the Viogniers of the Rhone Valley, and the wish to bring that quality to their own hills; the name comes from the heron that occasionally stops at the small lake overlooked by the vineyard.

## Tasting notes

Aromas of honey, white flowers and citrus; the palate is rich, enveloping and soft, with exceptional freshness.

A good aperitif, and a match for fish, oysters, risotto and soft blue-veined cheeses.
