Bunches are refrigerated for 5 to 7 days, then the partly destemmed grapes are gently pressed and fermented in white at 16 to 18 C for 15 to 20 days. Second fermentation by the Martinotti method over 8 months, then bottle maturation before release. Zero dosage, 11.5 to 12% vol.

## Tasting notes

Fine and persistent perlage and a light, pale colour. The nose is delicately perfumed with yellow stone fruits, a hint of tropical notes and almond biscuits. Very fresh and crunchy on the palate, smooth and persistent.
